The peculiarity of this ricotta is the smoking, which is carried out as in the old days in the shelters. The fresh ricotta is placed on a metal grill and slowly smoked with lukewarm beech wood smoke.
La ricotta un classico formaggio a pasta molle, molto compatto e di colore bianco brillante, dal gusto fresco e leggermente dolce.
La particolarit di questa ricotta laffumicatura, che viene eseguita nei rifugi, proprio come allora. La ricotta fresca viene adagiata su una griglia metallica e affumicata lentamente con affumicatura tiepida di legno di faggio
